Ingredients and Substitutions
If you’re a visual person, here’s a photo of what you’ll need to make this recipe:

- Unsalted butter – If you only have salted butter on hand, skip the added salt in this recipe.
- Light or dark brown sugar
- Vanilla extract
- 2 large eggs
- All-purpose flour
- Graham cracker crumbs – made by crushing 16 full sheets of graham crackers.
- Baking powder – make sure it’s fresh, for best results.
- Fine sea salt
- Marshmallow creme – also known as marshmallow fluff.
- Chocolate bars – I used Hershey’s milk chocolate bars for this batch, but you can use semisweet chocolate, bittersweet, or any chocolate bar you like. You can also substitute a 12 ounce bag of chocolate chips if you prefer.
Step by Step Instructions
STEP ONE: Preheat the oven to 350 degrees F. Spray a 9- by 13-inch baking dish with baking spray and line the bottom of the pan with parchment paper.

STEP TWO: Combine the butter and brown sugar and cream until smooth. Add the eggs and vanilla, and mix well.

STEP THREE: Add the flour, graham cracker crumbs, flour, and salt, and mix well.

STEP FOUR: Press about 2/3 of the dough mixture in the bottom of the baking dish.

STEP FIVE: Dollop the marshmallow cream over the dough. It doesn’t have to be perfect!

STEP SIX: Top with about 2/3 of the chocolate pieces.

STEP SEVEN: Spoon the remaining dough on top, leaving some places open so the chocolate and marshmallow show through.
STEP EIGHT: Bake until the edges are lightly browned and dough on top is baked, about 30 minutes. Immediately top with the remaining chocolate pieces.

STEP NINE: Cool to room temperature, and cut in 12 bars.

How to Store Leftovers
Store these chewy cookie bars tightly covered in the refrigerator for up to 3 days. You can warm the chilled bars in the microwave for 25-30 seconds to make them soft and chewy.
