This chewy toffee blondies recipe is easy to make and so tasty. The sweet butterscotch brownies that form the base of the blondies are a variation of my mom’s recipe, and they’re so good!
I like to top them with Heath English Toffee Bits, or chopped chocolate toffee bars like Skor candy bars. The candy bars melt into the Blondies while they’re baking, and the flavor is incredible!
These bars are baked in a 9- by 13-inch baking dish, so you’ll have plenty to serve for dessert, at parties, or for the holidays. (For more bar cookie recipes, check out our Coconut Chocolate Bars and Butterscotch Brownies.)

3 Reasons You’ll Love This Recipe

Ingredients Notes
Here’s a picture of what you’ll need to make this recipe:

1 cup chocolate toffee bits – You can use the prepackaged Heath bits, or make your own by coarsely chopping about 6 full size Heath or Skor candy bars.
2 cups lightly packed dark brown sugar – I like the rich flavor of dark brown sugar, but feel free to use light brown sugar if that’s what you have on hand.
1/2 cup (1 stick) butter – I like salted butter for this recipe, but you can use unsalted if you prefer less salt.
2 large eggs
1 teaspoon vanilla extract – You can also use vanilla paste if you prefer.
1 1/2 cups all purpose flour – I use white unbleached flour, but you can use whole wheat flour if you prefer.
2 teaspoons baking powder – Make sure your baking powder is fresh for the best rising results. Rumford Baking Powder is my favorite brand because it’s non-GMO.
1/2 teaspoon sea salt – I prefer fine sea salt for this recipe because it incorporates well into the thick batter.
Cooking Equipment Needed
You don’t need any fancy equipment or cooking gadgets to make this recipe,
- 9- by 13-inch glass baking dish
- Large mixing bowl
- Medium mixing bowl
- Whisk
- Spatula
- Cooling rack
Step by Step Instructions
STEP ONE: Preheat oven to 350 degrees F and lightly grease a 9- by 13-inch baking dish.
STEP TWO: In a large bowl, mix together the butter, brown sugar, eggs and vanilla.

STEP THREE: In a separate bowl, whisk together the flour, baking powder and salt.
STEP FOUR: Add the dry ingredients to the butter mixture and stir until blended.

STEP FIVE: Spread the batter in the prepared pan. (The batter will be thick.)
STEP SIX: Sprinkle the toffee pieces evenly over the top and press lightly.

STEP SEVEN: Bake for 25-30 minutes, or until dry on top and almost firm to the touch. Let cool in the pan for 10-15 minutes.

STEP EIGHT: Cut in rectangles with a sharp knife, making 4 cuts lengthwise and 6 cuts across.
For very straight and even bars, sometimes I use a ruler to measure the brownies and mark the cut lines with toothpicks.

This recipe makes 24 bars.

Storing Instructions

Store the bars, tightly wrapped or in an airtight container, at room temperature. Plan to eat then within 5 days for best flavor.
The blondies can also be frozen, tightly wrapped, for up to 2 months. Thaw overnight in the refrigerator for best results, and let the bars come to room temperature before serving.

Good question. Yes, they can be frozen. Tightly wrap the bars and store in a sealed freezer container or freezer bag. Thaw overnight in the refrigerator. They’re best eaten within a month of freezing. Hope you love them! ~Eliza
