These easy S’mores Cookie Bars are baked in a 9 x 13 pan with a soft brown sugar and graham cracker crumb base, layers of chopped chocolate, and gooey marshmallow fluff. Made in one bowl and ready in under an hour, they deliver all the classic campfire flavors in a simple bar cookie that’s perfect for sharing.

Instructions
Preheat the oven to 350 degrees F. Grease a 9- by 13-inch baking dish, and line the bottom with a sheet of parchment paper.
In the bowl of a stand mixer, combine the softened butter and brown sugar. Cream until smooth. Add in the eggs and vanilla and mix until combined.
Add in the flour, graham cracker crumbs, baking powder and salt. Mix thoroughly, scraping down the sides as needed.
Press approximately ⅔ of the dough into the bottom of the prepared pan.
Dollop the marshmallow fluff over the dough and spread slightly.
Place about ⅔ of the chocolate pieces over the marshmallow fluff.
Top with pieces of the remaining dough, leaving some of the marshmallow and chocolate exposed.
Bake in the preheated oven until the edges are just beginning to brown, about 30 to 35 minutes. Remove from the oven and immediately top with the remaining chocolate pieces.
Allow to cool to room temperature before cutting. Makes 12 large bars.

Storage: S’mores bars should be stored in an airtight container in the fridge for up to 3 days.To warm the chilled cookies, arrange on a plate in the microwave and heat on High for 25-30 seconds or until soft and chewy.
