If you’re accustomed to always cooking dinner that includes some sort of meat, try to sneak a vegetarian meal in from time to time. Pasta, burritos, soup, stir-fry, a hearty salad, bruschetta — many recipes are already vegetarian or just need a substitution (beans instead of beef in chili, for example) for a yummy, meat-free meal. I’m not much of a meat eater so a vegetarian meal does not bother me. I probably eat like that most of the time. Like last night, I had a baked potato with brocolli and cheese on it. A lot of times I’ll just make pasta in broth for seasoning and add brocolli on top.
I think if you start thinking about meal planning as having a protein (not necessarily a meat), a carbohydrate (whole grain) and a veggie instead of, “What meat will I have tonight?” and then everything else is a second thought. You will save money (meat is probably the most expense item in your dinner) and you will be healthier.

We try to eat vegetarian at the very least once a week and often twice. One night is always soup. My kids will eat almost any vegetable in a soup. Tonight we are having a homemade mac and cheese that they often ask for.
